The Method of Purifying Impure Honey

Question

Regarding the method of purifying honey, it is written in Bihishti Zewar (“Heavenly Ornaments”) that water equal in quantity should be added to the honey and it should be cooked until the water that was added burns off, and this should be done three times. But the question is that honey, after being mixed with water and cooked, no longer remains honey but becomes a medicine. So my request is: how may honey be purified while keeping it honey, so that its essence does not change?

Answer

If the honey is liquid and not solidified, then water equal to it in quantity should be added to it and stirred well; then, when the honey separates from the water, the water should be poured off. By doing this three times, too, the impure honey will become pure. If the honey is solidified, it should first be made liquid and then purified by the method mentioned.
