Chitosan, chitin — is it halal?

Ruling: Mashbuh (doubtful)

Description

Chitin is a polysaccharide of crustacean shells and fungal cell walls; chitosan is obtained by its partial deacetylation with alkali. The main industrial raw material is crab and shrimp shells (demineralisation with hydrochloric acid, deproteinisation with alkali or proteases, biological methods are studies). The alternative is chitosan from fungi (an EU novel food; only fungal chitosan is allowed for wine).

Basis of the ruling

Chitin is a polysaccharide of crustacean shells and fungal cell walls; chitosan is made from chitin by treatment with alkali. The main industrial raw material is shrimp and crab shells, and also lobster shells; studies also use krill, crayfish and the internal shell of squid.
