E491 Sorbitan monostearate — is it halal?
Description
An emulsifier: a mixture of partial esters of sorbitol and its anhydrides (sorbitan, isosorbide) with commercial stearic acid (stearic + palmitic). Per an industry review and producer statements, sorbitol comes from glucose of maize, potato, tapioca or wheat. No instrument names the fat from which the stearic acid comes; producers name palm oil, but an ICI patent on sorbitan esters allows hydrogenated tallow acids.
