Description
A water-in-oil emulsifier: esters of polyglycerol with condensed castor oil fatty acids (polyricinoleic acid). Under the instruments the fatty part comes only from castor oil. The polyglycerol is made from glycerol whose origin the instruments do not name (in the EU since 2023 glycerol meeting E 422), or synthesised from epichlorohydrin or glycidol. It is used in chocolate, spreads, sauces and colour preparations.
