The Messenger of Allah ﷺ said: “The lawful is clear and the unlawful is clear, and between them are doubtful matters that many people do not know. Whoever guards against the doubtful matters protects his religion and his honor.”

Tagatose — is it halal?

Description

D-tagatose is a rare sugar sweetener (a ketohexose, an epimer of fructose). The main route is from milk lactose: hydrolysis with lactase or sulphuric acid, then isomerisation of galactose with calcium hydroxide (Arla) or with L-arabinose isomerase of GM bacteria (CJ, Damhert); the lactose comes from cheese whey, where rennet is possible. Other routes are fructose epimerisation (CJ)
