Description

Sausage products — a mix of comminuted meat and non-meat ingredients in a casing or mould: sausages, frankfurters, salami, pepperoni, cervelat. In the EAEU the meat species need not be in the name (“cervelat”, “salami” are names by cut-surface pattern), and under GOST 23670-2019 even “Beef” sardelki may contain pork raw fat; shpik is pig back fat. The casing is natural (intestines) or artificial.

Sausage products — sausages, frankfurters, salami, pepperoni, cervelat: a mixture of minced meat and other ingredients in a casing; the meat species need not be in the name, and they may contain pork, back fat, blood and intestinal casing.
