Kombucha — is it halal?

Ruling: Mashbuh (doubtful)

Description

Kombucha (tea fungus) is sweetened black or green tea fermented by a symbiotic culture of yeasts and acetic acid bacteria (SCOBY). The yeasts ferment sugar to alcohol; the bacteria oxidise alcohol to acetic acid. Alcohol is typically 0.007–2.3 %; bottled kombucha may keep fermenting. “Hard” kombucha has over 1 %, up to 5.5 %. Juices and herbs are added in secondary fermentation; one manufacturer lists grape juice.

Basis of the ruling

Kombucha is sweetened black or green tea fermented by a culture of yeasts and acetic acid bacteria (the “tea fungus”). The yeasts ferment the sugar into alcohol, and the bacteria oxidise the alcohol into acetic acid. The alcohol content is usually 0.007–2.3% and may rise in the bottle; in “hard” kombucha it reaches 5.
