E576 Sodium gluconate — is it halal?
Description
The sodium salt of gluconic acid: an acidity regulator and sequestrant. Gluconic acid is made by oxidising glucose from starch — by fermentation, enzymes or chemically — and neutralised with sodium hydroxide; a patent uses whey lactose, another ferments the mother liquor with yeast and protein powder. Alcohol: ethanol in some routes; animal: bovine liver catalase (patent)
